S’mores Ice Cream Cookie Sandwiches

Ingredients

Cookie Sandwich

  • 1 Cup Butter Softened
  • 1 1/2 Cups Light Brown Sugar
  • 2 Eggs
  • 2 Tsp Vanilla
  • 1 1/2 Cups Graham Cracker Crumbs or Gluten Free Vanilla Graham Crunchy Cookies
  • 1 Tsp Baking Soda
  • 1 Tsp Salt
  • 2 1/4 Cups Flour or Gluten Free All Purpose Flour
  • 1 3 oz Container Marshmallow Bits
  • 2 Cups Coarsely Chopped Milk Chocolate Bars

Topping & Filling:

  • 1 Quart Vanilla Ice Cream
  • 8 Large Marshmallows cut in 1/2
  • 2 Milk Chocolate Bars broken into pieces
  • Foil

Instructions

  1. Preheat the oven to 350*F (175*C).

  2. Spray the muffin top pan with cooking spray and set aside. Alternatively, prepare a baking sheet with parchment paper if not using a muffin top pan.

  3. Using a stand mixer (or hand mixer), begin by creaming together the softened butter and light brown sugar until light and fluffy. Then, add in the eggs one at a time, followed by the vanilla, mixing until the mixture is smooth and well combined.

  4. Next, keeping the mixer on a medium to low speed, gradually add in the graham cracker crumbs (or gluten-free vanilla graham crunchy cookies), baking soda, and salt until just well combined. Be careful not to overmix.

  5. Turn the mixer to low speed and slowly incorporate the flour (or gluten-free all-purpose flour) until just combined. The dough should be soft but manageable.

  6. Gently stir in or hand mix the marshmallow bits and coarsely chopped milk chocolate bars until evenly distributed throughout the dough.

  7. Fill each muffin top tin to the top with dough, pressing it around the pan evenly to ensure an even bake. If using a cookie sheet, form thick, deep dish style cookies.

  8. Bake the cookies for 8 minutes. Carefully remove them from the oven and quickly add the large marshmallow halves to approximately half of the cookies. For example, if you baked 12 cookies, place marshmallows on 6 of them.

  9. Return the cookies to the oven for an additional 4-5 minutes, or until the marshmallow is lightly golden brown and slightly melted.

  10. Remove the cookies from the oven and immediately place a piece of milk chocolate next to each marshmallow on the topped cookies. The residual heat will soften the chocolate.

  11. Allow the cookies to cool in the pan for 5-10 minutes. Then, carefully loosen the edges with a knife and use a small spatula to remove them easily. Transfer them to a wire rack.

  12. Let all cookies cool completely on a wire rack. This step is critical for successful sandwich assembly.

  13. Once the cookies are completely cooled, take one cookie topped with marshmallow and chocolate and one plain cookie. Place them on a piece of aluminum foil large enough to wrap around the finished sandwich.

  14. Place a layer of softened vanilla ice cream, about 1 inch thick, onto the plain cookie. Work quickly to prevent the ice cream from melting excessively.

  15. Place the cookie with the marshmallow and chocolate toppings directly on top of the ice cream layer, gently pressing down to form the sandwich.

  16. Immediately wrap the assembled cookie sandwich tightly in the foil and place it into the freezer.

  17. Repeat this process for all remaining cookies. Store the wrapped S’mores Ice Cream Cookie Sandwiches in the freezer for 6-8 hours, or overnight, to allow them to fully harden and set.
