Chocolate Covered Peanut Butter Jelly Roll Recipe

This delightful Chocolate Covered Peanut Butter Jelly Roll is easier than it looks and perfect for holiday entertaining!
Ingredients:
- 3 Eggs
- 1 Cup Sugar
- 1/4 Cup Cold Water
- 1 Tsp Vanilla Extract
- 1 Cup All-Purpose Flour
- 2 Tsp Baking Powder
- 1/2 Tsp Salt
- 2 Tbsp Christmas Sprinkles
- 1 Cup Skippy Creamy Peanut Butter
- 2 Tbsp Honey
- 1 Cup Crushed Honey Maid Graham Crackers
- 1 Container Chocolate Whipped Frosting
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the eggs, sugar, cold water, vanilla, all-purpose flour, baking powder, salt, and Christmas sprinkles. Mix until the batter is smooth and well combined.
- Line a 9×13 inch baking pan with parchment paper, extending the paper over the sides to create “handles.” Lightly spray the parchment paper with cooking spray to prevent sticking.
- Carefully and evenly pour the prepared batter into the lined baking pan, spreading it to the edges.
- Bake in the preheated oven for 12-15 minutes, or until the cake is lightly golden and springs back when gently touched. A toothpick inserted into the center should come out clean.
- While the cake is still warm, lay out another clean sheet of parchment paper on a flat surface, slightly larger than your cake.
- Carefully invert the warm cake onto the new sheet of parchment paper. Gently peel off the parchment paper that was used for baking.

- Place the rolled cake (still wrapped in parchment) seam-side down on a wire rack and allow it to cool completely to room temperature. This step is crucial for preventing cracks when unrolling later.
- Once cooled, carefully unroll the cake slowly and gently to avoid tearing.
- Evenly spread the Skippy Creamy Peanut Butter, honey, and crushed Honey Maid graham crackers over the entire surface of the unrolled cake.
- Carefully roll the cake back up, starting from the same short end you began with.
- Generously ice the top and sides of the jelly roll with the chocolate whipped frosting, ensuring an even coating.
