These pairings ensure a balanced and incredibly satisfying plate.
Unlocking Flavor: The Essential Marsala Cooking Wine

At the heart of our Grilled Steak Marsala lies the distinctive flavor of Marsala cooking wine. This fortified wine, originating from Sicily, is renowned for its complex profile, which includes notes of dried fruit, brown sugar, and a hint of nutty caramel. It’s the secret ingredient that truly sets this dish apart, creating a marinade that is both rich and aromatic. You’ll find Marsala Cooking Wine readily available at most local grocery stores and major retailers like Walmart, making this gourmet experience surprisingly accessible.
It’s crucial to use Marsala wine specifically, as substituting it with other wines will significantly alter the authentic flavor profile of the marinade. While other wines might work in different recipes, Marsala’s unique characteristics are irreplaceable here. The subtle sweetness and deep savory notes it brings are what define this classic dish. Allowing your steak to marinate for approximately 2 to 4 hours is key to ensuring it thoroughly absorbs these wonderful flavors, resulting in a tender, juicy, and intensely flavorful steak.
Selecting the Perfect Steak Cut for Marsala Perfection

One of the beauties of this Grilled Steak Marsala recipe is its versatility when it comes to steak cuts. While nearly any cut will yield delicious results, we have a few favorites that consistently shine. Ribeye is a fantastic choice, known for its rich marbling, which melts during cooking, infusing the meat with incredible flavor and tenderness. Tenderloin, true to its name, offers unparalleled tenderness and a delicate flavor that beautifully complements the Marsala marinade. KC Strips (New York Strips) are also excellent, providing a good balance of tenderness and robust beefy flavor.
Ultimately, the best cut of steak is often your favorite! Don’t hesitate to experiment with what you enjoy most. Whether it’s a lean sirloin, a flavorful flank steak, or a skirt steak, the Marsala marinade will work its magic. This recipe is designed for approximately 1 1/2 pounds of steak. If you plan to grill more than that, remember to double the marinade ingredients to ensure every piece gets a generous coating of that wonderful Marsala goodness. Always select high-quality beef for the best results, looking for good color and minimal excess fat, unless you prefer the flavor of well-marbled cuts.
Achieving Optimal Steak Doneness: A Temperature Guide

Cooking steak to your desired doneness is key to a truly enjoyable meal. The most reliable way to achieve consistently perfect results is by using an internal meat thermometer. This simple tool takes the guesswork out of grilling, ensuring your steak is tender and cooked exactly to your preference every time. Different internal temperatures correspond to various levels of doneness, each offering a unique texture and juiciness:
- Rare: 125°F (52°C) – Cool red center, very tender.
- Medium-Rare: 130-135°F (54-57°C) – Warm red center, tender.
- Medium: 140-145°F (60-63°C) – Warm pink center, firm.
- Medium-Well: 150-155°F (66-68°C) – Slightly pink center, mostly gray, firm.
- Well Done: 160-165°F (71-74°C) – No pink, firm.
We typically aim for our steaks to reach an internal temperature of 140-145°F, which results in a delicious medium to medium-well doneness. This provides a beautiful pink center without being overly rare, striking a perfect balance of tenderness and flavor. It’s important to note that as you move towards well-done, the steak’s texture will become increasingly firm and can be less juicy. Always let your steak rest for 5-10 minutes after grilling; this allows the juices to redistribute, ensuring a more tender and flavorful bite.
The Irresistible Addition: Sautéed Mushrooms
No Grilled Steak Marsala would be complete without a generous topping of savory sautéed mushrooms. These earthy fungi add an incredible depth of flavor and a wonderfully tender texture that perfectly complements the rich Marsala-infused steak. The best part? They’re incredibly simple to prepare, cooked quickly in butter on your stovetop while your steaks are on the grill.

The mushrooms provide an essential element to this meal, tying all the flavors together with their umami richness. Cremini or button mushrooms are excellent choices, offering a mild, versatile flavor. For an extra layer of smoky goodness that mirrors the grill, you can even prepare them as Smoked Mushrooms directly on your pellet grill if you prefer. Whichever method you choose, these tender, buttery mushrooms will elevate your Steak Marsala to a truly memorable dish.

Ingredients
Steaks:
- 2 Tender Steaks (Ribeye, Tenderloin, KC Strips) – Approx 1 1/2 Lbs – Your Favorite Cut
- 1/2 Cup Marsala Cooking Wine
- 1/4 Cup Fresh Chopped Rosemary
- 1/4 Cup Fresh Chopped Parsley
- 1 Clove Crushed Garlic
Mushrooms:
- 2 Cups Thinly Sliced Mushrooms
- 1 Tbsp Butter
Instructions
- Pour the Marsala cooking wine, rosemary, parsley, and garlic into a large, sealable bag.
- Place the steaks in the bag, seal it, and mix them thoroughly to ensure they are fully coated with the marinade.
- Place the sealed bag into a dish or container to catch any potential leaks during marination.
- Refrigerate the sealed steaks for 2-4 hours to allow them to marinate and absorb the flavors.
- Preheat your grill to 450°F (230°C) and place the marinated steaks directly on the grill grates.
- Grill each side for approximately 10 minutes, or until your desired doneness is reached. Use a meat thermometer to check the internal temperature (for well-done, aim for at least 165°F / 74°C; we prefer ours around 140-145°F / 60-63°C for medium).
- While the steaks are cooking, heat a small skillet over medium heat on your stovetop.
- Add the butter to the skillet, letting it melt and coat the pan with a wooden spoon. Add the thinly sliced mushrooms and sauté for about 5 minutes, or until they are soft and tender.
- Once the steaks are cooked to your liking, remove them from the grill, let them rest for a few minutes, then top with the sautéed mushrooms and serve immediately.
Notes
If you are cooking more than 1 1/2 pounds of steak, consider using two separate bags and doubling the entire recipe to ensure ample marinade for all the meat.
