Ingredients

  • 1 Lb Ground Chicken
  • 1 Package Taco Seasoning (or Gluten Free Taco Seasoning)
  • 1 12-16 oz Package Elbow Macaroni (or Gluten Free Elbow Macaroni)
  • 2 8 oz Cans Tomato Sauce
  • 1 14.5 oz Can Diced Tomatoes with Green Chilies (Drained)
  • 1 15 oz Can Ranch Style Beans
  • 1/2 Cup Sliced Black Olives
  • 1/4 Cup Chopped Onion
  • 1 Cup Shredded Sharp Cheddar Cheese

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet sprayed with non-stick cooking spray, cook the ground chicken until thoroughly browned and no longer pink. Drain any excess fat.
  3. While the chicken is cooking, prepare and cook the macaroni according to package directions. Drain well and return to the bowl.
  4. Once the chicken is done, return it to the skillet. Add the taco seasoning and prepare as indicated on the package, stirring to coat the chicken evenly.
  5. Add the cooked and seasoned chicken to the macaroni pasta. Stir in the tomato sauce and the drained diced tomatoes with green chilies. Mix until all the pasta is well coated with the sauce.
  6. Spray a 9×13 inch baking dish with non-stick cooking spray. Spread half of the pasta mixture evenly over the bottom of the dish.
  7. Evenly top this layer with the ranch style beans, half of the sliced black olives, and half of the chopped onion. Sprinkle with 1/2 cup of the shredded sharp cheddar cheese.
  8. Carefully spread the remaining pasta mixture on top of this layer, ensuring it is evenly distributed.
  9. Top the entire casserole with the remaining black olives, chopped onions, and the remaining 1/2 cup of shredded sharp cheddar cheese.
  10. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  11. Serves 8-10.
