Summer Squash Pizza

Ingredients

  • 1 Tsp Olive Oil
  • 1 Tsp Balsamic Vinegar
  • 1/8 Tsp Garlic Salt
  • 1/8 Tsp Ground Black Pepper
  • 1 Medium Zucchini, cut lengthwise into slices
  • 1 Medium Yellow Squash, cut lengthwise into slices
  • Cooking spray
  • 1 12 Inch Gluten Free Pizza Crust or Dough
  • 1 Roma Tomato, cut into slices
  • 1/4 Cup Finely Grated Italian Cheese
  • 1 Tsp Basil

Instructions

  1. Prepare grill and warm to medium-high heat.
  2. Combine olive oil, balsamic vinegar, garlic salt, black pepper, zucchini, and squash in a large bowl. Toss gently to ensure all vegetables are evenly coated. Place the seasoned vegetable mixture onto a sheet of foil, carefully wrap it up, and secure the edges to create a packet. Then, place this foil packet directly on the grill and cook for 2-3 minutes on each side, or until the squash and zucchini are tender-crisp.
  3. While the squash cooks, prepare your pizza crust. Lightly spray a separate sheet of foil with cooking spray to prevent sticking. Place the pizza crust or dough onto this prepared foil sheet. Carefully transfer the foil with the pizza crust to the grill. Grill for 2-5 minutes, or until the bottom of the crust is golden and firm enough to handle.
  4. Using tongs or a pizza peel, carefully flip the pizza crust over, removing it from the foil. The uncooked side of the crust should now be facing up, ready for toppings.
  5. Arrange the tender grilled zucchini and squash slices evenly over the pizza crust. Next, distribute the fresh Roma tomato slices over the vegetables.
  6. Generously sprinkle the finely grated Italian cheese over the toppings. Then, scatter the fresh basil. At this point, you can also add a pinch of additional garlic salt if you prefer a bolder flavor.
  7. Continue to cook the pizza on the grill for another 2-5 minutes, or until the bottom of the crust is fully cooked and golden brown, and the cheese is beautifully melted and bubbly. Carefully remove from the grill, slice, and serve immediately.
