Why Choose the Ninja Foodi for Collard Greens?

The Ninja Foodi, a versatile multi-cooker, truly shines when it comes to preparing dishes like collard greens. Traditionally, cooking collard greens on the stovetop can take hours to achieve that desired melt-in-your-mouth tenderness. However, with the Ninja Foodi’s pressure cooking capability, you can significantly cut down on cooking time without sacrificing flavor or texture. This means you can enjoy perfectly cooked, deeply flavored collard greens in a fraction of the time, making it ideal for busy weeknights or when you’re entertaining guests.

Pressure cooking locks in moisture and infuses the greens with the smoky essence of bacon and savory broth, creating a more intense and cohesive flavor. The high-pressure environment also breaks down the tough fibers in the collard greens more efficiently, resulting in greens that are incredibly tender and easy to eat. Plus, the convenience of a single pot reduces cleanup, a bonus for any home cook. If you’re looking for an efficient way to enjoy a classic Southern side, the Ninja Foodi is undoubtedly your best friend.

Essential Tips for Perfect Ninja Foodi Collard Greens

Achieving the best results with your Ninja Foodi collard greens involves a few key steps and considerations. These tips will help you maximize flavor and ensure your dish is a resounding success.

Managing Bacon Grease for Optimal Flavor and Safety

This recipe starts with cooking bacon, which adds an incredible depth of smoky flavor to the collard greens. However, it’s crucial to properly manage the bacon grease. After cooking the bacon until crispy, you’ll need to drain most of the grease from the Ninja Foodi pot before proceeding to pressure cook. While some bacon flavor is desirable, a large amount of grease can be problematic.

Bacon grease has a relatively low smoke point. When subjected to the high heat and pressure of a pressure cooker, it can not only create an unpleasant burnt flavor but also potentially lead to excessive smoke or even damage your appliance. By draining the majority of the grease, you ensure that the remaining fat and the infused bacon bits contribute delicious flavor without overwhelming the dish or creating a safety hazard. You don’t need to completely scrub the pot; just removing the excess liquid grease is sufficient to leave enough residual flavor.

When to Add Your Onions

You might be tempted to sauté the diced sweet onion along with the bacon. While this is certainly an option, and it will infuse the onions with a rich bacon flavor, removing them from the pot to drain the bacon grease can be a bit challenging. Using a slotted spoon can help, but it adds an extra step. For simplicity and consistent cooking, it’s often easier to add the onion directly with the other ingredients before pressure cooking. The onions will soften beautifully under pressure and still contribute their aromatic sweetness to the collard greens without the fuss of separate handling.

Flavor Variations: Bacon, Ham, or Smoked Turkey

While bacon is a classic choice for flavoring collard greens, this recipe is highly adaptable. If you prefer a different smoky element or are looking for alternatives, consider using diced ham or smoked turkey. Ham hocks or smoked turkey legs/wings can provide a similar deep, savory essence. If using ham or smoked turkey, you might skip the initial grapeseed oil and sauté step for bacon, adding them directly with the broth and greens. Just ensure they are cut into appropriate sizes to infuse flavor during pressure cooking. These alternatives can slightly alter the nutritional profile and flavor, but both are excellent choices for southern-style greens.

Adjusting the Spice Level with Red Pepper Flakes

The addition of red pepper flakes gives these collard greens a delightful spicy kick. This is a personal preference, so feel free to adjust the amount according to your taste. If you’re not a fan of spicy food, you can reduce the amount or omit them entirely. Conversely, if you love a fiery side dish, don’t hesitate to add more than what is listed in the recipe. Other ways to add heat include a dash of cayenne pepper or a small, finely diced jalapeño for a fresh chili flavor.

Selecting and Preparing Your Collard Greens

The quality of your collard greens significantly impacts the final dish. Look for fresh, dark green leaves that are crisp and free from yellowing or blemishes. Avoid any bunches that appear wilted or slimy. Freshness ensures a more vibrant flavor and better texture.

Before cooking, proper cleaning is essential. Collard greens can hold a lot of dirt and grit. Start by separating the leaves from the bunch. Wash them thoroughly under cold running water, scrubbing gently to remove any soil. Some cooks prefer to fill a sink with cold water, add the greens, and let them soak for about 10-15 minutes, then rinse and repeat. This helps dislodge stubborn dirt. After washing, stack a few leaves on top of each other, fold them in half lengthwise, and remove the tough central stem (known as the rib) by cutting it out or tearing it away. The rib can be fibrous and less pleasant to eat. Once destemmed, roll the leaves tightly and slice them into 1-inch ribbons. This uniform size ensures even cooking and makes them easier to eat.

The Secret Ingredient: Why Vinegar in Collard Greens?

One of the most common questions about cooking collard greens is the inclusion of vinegar. The answer lies in its magical ability to transform the greens. Collard greens naturally possess a slightly bitter taste, which can be off-putting to some. Adding a small amount of acid, like vinegar, along with a touch of salt, effectively mellows out this bitterness. The vinegar brightens the overall flavor, adding a subtle tang that perfectly complements the rich, smoky elements from the bacon and broth.

In this recipe, Apple Cider Vinegar is recommended due to its slightly fruity and mellow acidity, which contributes a wonderful depth of flavor. However, if Apple Cider Vinegar isn’t readily available, regular white vinegar works just as well to achieve the desired effect. The key is to balance the flavors, ensuring the vinegar enhances rather than overpowers the dish. This balanced flavor profile is what makes traditional southern collard greens so irresistible, often leading to a delicious liquid at the bottom of the pot, known as “pot liquor,” which many consider a delicacy to be sopped up with cornbread.

Serving and Storing Your Delicious Collard Greens

These Ninja Foodi Collard Greens are best enjoyed warm, served fresh out of the pot. When serving, use a slotted spoon to allow any excess liquid to drain off, ensuring each spoonful is packed with flavorful greens. The rich “pot liquor” can be served alongside, for those who enjoy dipping cornbread or rice into it.

Collard greens make an excellent side dish for a variety of meals, especially classic Southern comfort food. They pair wonderfully with Ninja Foodi Whole Chicken, a Simple Crockpot Whole Chicken, or Easy Air Fryer Ham. Their robust flavor and tender texture also complement pork chops, smoked brisket, or even a simple grilled fish.

Storage and Reheating

Should you have any leftovers, these collard greens store beautifully. Allow them to cool completely before transferring them to an airtight container. They can be refrigerated for up to 3-4 days. For longer storage, collard greens freeze exceptionally well. Portion them into freezer-safe bags or containers and freeze for up to 3 months. Thaw frozen greens in the refrigerator overnight before reheating.

To reheat, gently warm them on the stovetop over medium-low heat, adding a splash of chicken broth or water if they seem dry, until heated through. You can also microwave them in short intervals, stirring occasionally. Reheating in the Ninja Foodi on the ‘Sauté’ setting with a little liquid is another convenient option.

  • 1 Tbsp Grapeseed Oil
  • 8 Slices of Bacon
  • 1 Cup Chicken Broth
  • 2 Pounds (Bunches) Collard Greens, Cleaned & Trimmed
  • 1 Tbsp Apple Cider Vinegar
  • 1/4 Cup Diced Sweet Onion
  • 1/2 Tsp Red Pepper Flakes
  • 1/2 Tsp Garlic Salt

Instructions

  1. Begin by turning the Ninja Foodi Multi-Cooker to SAUTE, add in the grapeseed oil, then cook the bacon on HIGH using this function. Once done, place the bacon on a paper towel-lined plate and remove or drain the grease from the pot.
  2. Once drained, add back in the bacon, chicken broth, collard greens, vinegar, onion, red pepper flakes, and garlic salt.
  3. Secure the pressure cooker lid and set the nozzle to SEAL.
  4. Cook on HIGH pressure for 8 minutes.
  5. Turn the Nozzle to VENT to quick release the pressure.
  6. Stir up well and serve with a slotted spoon.

Notes

Due to the low smoke point of bacon grease, it’s best to drain the bacon from the pot of the Ninja Foodi before pressure cooking. It does not have to be fully cleaned, but do not leave a lot of bacon grease in the bottom.
