Easy Eggplant Bites

Ingredients

  • 1 Eggplant
  • 2 Eggs (Beaten)
  • 1 Box of Wasa Multi Grain Crackers
  • 1/4 Cup Parmesan Cheese (Grated)
  • 1 Tsp Basil
  • 1 Tbsp Dried Parsley
  • 1 Tsp Rosemary
  • 1 Tsp Thyme
  • Marinara Sauce for Dipping (Optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the eggplant into 1/8 inch slices and set aside.
  3. Crack the eggs in a bowl and beat well, then set aside.
  4. In a food processor, place the crackers and blend until they are well crushed into a coarse crumb mixture.
  5. Place the crushed crackers in a bowl with the Parmesan cheese, basil, parsley, rosemary, and thyme. Mix thoroughly to combine all ingredients.
  6. Dip each eggplant slice in the beaten egg, shaking off any excess. Then, dip it into the cracker mixture, ensuring the eggplant is fully coated on both sides. Gently press the coating to help it adhere.
  7. Place the coated eggplant slices on a greased cookie sheet, leaving a small space between each piece.
  8. Continue this process until all the eggplant slices have been coated and placed on the cookie sheet.
  9. Bake for 20-30 minutes, or until the eggplant bites are crisp and golden brown.
  10. Serve immediately with marinara sauce for dipping, if desired.
