These delightful whoopie pies are an effortless way to bring some sparkle to your New Year’s celebration. Using a devil’s food cake mix as a shortcut, you’ll have these festive treats ready in no time!
Ingredients
- 1 Box Devil’s Food Cake Mix
- 3 Eggs
- 3/4 Cup Water
- 1/2 Cup Oil
- 2 Containers of Whipped Vanilla Frosting
- Gold and Silver Sprinkle Gems (for decoration)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the devil’s food cake mix, eggs, water, and oil. Mix until the batter is smooth and well combined.
- Prepare a cookie sheet by greasing it lightly, or use a dedicated whoopie pie pan. Spoon or pipe the batter into small, circular portions on the prepared sheet. I was able to make about 30 circles, which yielded 15 whoopie pies. You may get more or fewer depending on the size of your circles.
- Bake in the preheated oven for approximately 15 minutes. To ensure they are thoroughly baked, insert a toothpick into the center of a cake circle; if it comes out clean, they are done.
- Once baked, carefully transfer the cake circles to a wire rack and allow them to cool completely before frosting. This is a crucial step to prevent the frosting from melting.
- Once the cake circles are completely cooled, take one circle and apply a generous portion of whipped vanilla frosting to its flat bottom. Place another cake circle on top, flat side down, to create a sandwich – your whoopie pie!
- In a small, shallow bowl, gently mix a small amount of the gold and silver sprinkle gems. Carefully roll the side of each whoopie pie (where the frosting is exposed) through the sprinkles to coat the icing with a festive shimmer.
- Continue this process with the remaining cake circles and frosting until all your delightful New Year’s Whoopie Pies are assembled and decorated.
