Beyond your multi-cooker, gathering the right ingredients is key to achieving that perfect balance of heat and creaminess. Here’s a breakdown of what you’ll need, along with some tips for best results:

For the Tender Buffalo Chicken:

  • Salted Butter: The base for sautéing, adding richness to the chicken.
  • Boneless, Skinless Chicken Breast: Cut into bite-sized pieces for quick cooking and easy integration into the mac and cheese. You can also use chicken thighs for a richer flavor.
  • Salt & Ground Black Pepper: Basic seasonings to enhance the chicken’s natural flavor.
  • Lemon Pepper: Adds a bright, zesty note that complements the buffalo flavor beautifully.

For the Irresistible Creamy Buffalo Cheese Sauce:

  • Gluten-Free or Regular All-Purpose Flour: Essential for creating a roux, which thickens the sauce to a perfect consistency.
  • Chicken Broth & Milk: The liquid base for your sauce, providing depth and creaminess.
  • Garlic Powder & Onion Powder: Aromatic spices that build the foundational flavor of the cheese sauce.
  • Ground Mustard: A secret weapon in cheese sauces, enhancing the cheesy flavor without being overpowering.
  • Buffalo Hot Sauce (e.g., Frank’s RedHot): The star ingredient for that signature buffalo tang and heat. Adjust to your preferred spice level.
  • Shredded Cheddar Cheese & Shredded Mozzarella Cheese: A blend of cheeses for maximum flavor and meltiness.

  • Elbow Macaroni (Gluten-Free or Regular): The classic pasta shape for mac and cheese, holding onto that delicious sauce.
  • Cream Cheese (Room Temperature) & Sour Cream: These are crucial for adding an extra layer of creaminess and a slight tang, balancing the richness of the cheddar and mozzarella.

For the Crispy Topping:

  • Gluten-Free or Regular Breadcrumbs (Panko preferred): For that irresistible crunchy texture on top.
  • Melted Butter: Drizzled over the breadcrumbs to help them brown and crisp beautifully.

Pro Tip for Cheese: For the best melting and creamiest sauce, we highly recommend using a block of cheese and shredding it by hand with a grater. Pre-shredded cheeses often contain anti-caking agents that can prevent them from melting as smoothly and thoroughly, potentially leading to a grainy sauce. Freshly shredded cheese will make a noticeable difference in the texture of your mac and cheese!

Effortless Gluten-Free Adaptation

Making this Buffalo Macaroni and Cheese gluten-free is incredibly simple, requiring just a few key substitutions. The primary swaps are:

  • Gluten-Free Elbow Macaroni: This is the most important change. We’ve found that brands like Target Brand or Barilla gluten-free pasta tend to perform best under pressure cooking, avoiding the undesirable slimy texture that some gluten-free pastas can develop.
  • Gluten-Free All-Purpose Flour: When creating the roux for the sauce, use a 1:1 gluten-free all-purpose flour blend. Excellent options include Bob’s Red Mill Gluten-Free 1-to-1 Baking Flour, Better Batter, or King Arthur Gluten-Free All-Purpose Flour.
  • Gluten-Free Breadcrumbs: For the crispy topping, ensure you use gluten-free panko breadcrumbs.

Always double-check the labels of all your ingredients to confirm they are certified gluten-free, especially for broths and sauces, to ensure your meal is safe for those with sensitivities.

Pro Tips for Crafting Perfect Ninja Foodi Buffalo Mac and Cheese

Making this dish is straightforward, but a few expert tips can elevate your results and make the process even smoother:

Perfecting Your Pasta:

The first step is cooking your pasta. While you can certainly boil your elbow macaroni on the stovetop, using your Ninja Foodi for this step is incredibly efficient and saves you an extra pot to wash! If opting for the Ninja Foodi method:

  • Add your pasta to the Ninja Foodi pot along with 4 cups of water.
  • Pressure cook on HIGH pressure for *half the time* indicated on the pasta box instructions. For example, if the box says 8 minutes for stovetop, pressure cook for 4 minutes. This method helps prevent overcooked, mushy pasta.
  • Once the timer beeps, perform a quick release of pressure by carefully moving the nozzle to the VENT position. This stops the cooking process immediately and ensures your pasta retains a good al dente texture.

Once your pasta is cooked and drained, set it aside. This frees up your Ninja Foodi pot to move on to the next delicious steps: preparing the buffalo chicken and building the creamy sauce using the SAUTE function.

Sautéing the Chicken to Perfection:

Cooking the chicken in the Ninja Foodi ensures it’s perfectly seasoned and tender. Be sure to cook it until no longer pink and reaches an internal temperature of at least 165°F. Don’t worry about getting it super crispy at this stage; the air crisp function will take care of the topping later.

Crafting the Velvety Sauce:

The key to a rich mac and cheese lies in its sauce. After cooking the chicken, use the remaining flavorful fat and oil as a base for your roux. Whisking in the flour, then gradually adding chicken broth and milk, will create a smooth, lump-free foundation. Continue whisking on high heat for a few minutes to allow the sauce to thicken before incorporating your spices and cheeses. Adding cream cheese and sour cream at the end ensures an extra layer of luxurious creaminess and a delightful tang that balances the rich cheese and spicy buffalo notes.

The Crispy Air-Crisped Topping:

Once your chicken, pasta, and sauce are beautifully combined, spreading it evenly in the pot and topping with butter-drizzled breadcrumbs is the final touch. The Ninja Foodi’s Air Crisp function works wonders here, transforming ordinary breadcrumbs into a golden-brown, crunchy topping that adds an irresistible textural contrast to the creamy mac and cheese. This crucial step takes your dish from great to extraordinary!

For those who love extra heat, a sprinkle of red pepper flakes on top before air crisping or just before serving will take the spice level up a notch!

Storing and Reheating Your Delicious Leftovers

This Buffalo Chicken Macaroni and Cheese is so good, you might not have many leftovers! But if you do, storing them properly ensures you can enjoy them again later. Simply transfer any remaining mac and cheese into an airtight container and refrigerate for up to 3 days.

To reheat, the air fryer is your best friend for bringing leftovers back to life! Place a portion in a heat-proof bowl or an air fryer-safe dish, sprinkle with a little extra shredded cheese if desired, and warm it in the air fryer at 300°F for 2-3 minutes. This method helps the mac and cheese retain its creamy texture while getting the cheese on top melty and delicious without drying out the dish.
