The Unpredictable Challenge of Weather

One of the most significant and ever-present challenges faced by potato farmers is the weather. Agriculture is, at its heart, deeply tied to nature’s whims.   1. Preheat your oven to a blazing 450°F (232°C). This high temperature is key to achieving that perfectly crispy exterior. Prepare a large baking sheet by lining it with parchment paper for easy cleanup and to prevent sticking.
  2. In a medium saucepan, bring a pot of lightly salted water to a rolling boil. Carefully add the small red potatoes and boil until they are perfectly fork-tender, which usually takes about 15-20 minutes depending on their size. You want them soft enough to mash easily, but not falling apart. If you’re using Side Delights® Steamables, follow the microwave instructions on the package for a quick and easy pre-cook, reducing the boiling time.
  3. Once boiled, drain the potatoes thoroughly and let them steam dry in a colander for a minute or two. This step is crucial for allowing them to crisp up properly in the oven. Arrange the tender potatoes evenly on the prepared baking sheet, ensuring there’s plenty of space between each one. Using a potato masher, the bottom of a glass, or a sturdy fork, gently press down on each potato to flatten and “crash” it.
