Ingredients

  • 2 Lbs Boneless, Skinless Chicken Breast
  • 1 Tbsp Olive Oil
  • 1 Clove Crushed Garlic
  • 1 8 oz Can Pineapple Chunks (Keep the juice)
  • 1 Green Pepper (Diced)
  • 1/4 Cup Sweet Onion (Diced)
  • 1 3/4 Cups Water
  • 3/4 Cup White Sugar
  • 1/2 Cup Distilled White Vinegar
  • 2 Tbsp Gluten-Free Soy Sauce
  • 1 Tbsp Ketchup
  • 1/4 Cup Cornstarch
  • 2 Cups Rice (Cooked)

Instructions

  1. Begin by cutting the chicken into small cubes, then set aside.
  2. Warm up the olive oil in a large skillet or cast iron pan along with the crushed garlic over medium heat.
  3. Add the cubed chicken to the skillet and cook until it is well done and lightly browned on all sides, about 5-7 minutes.
  4. While the chicken is cooking, prepare the sweet and sour sauce. In a medium-sized saucepan, combine the pineapple chunks (with their juice), diced green pepper, diced sweet onion, 1 1/2 cups of water, white sugar, and distilled white vinegar. Whisk these ingredients together until well combined.
  5. Stir in the gluten-free soy sauce and ketchup into the sauce mixture.
  6. Bring the sauce mixture to a boil over medium-high heat, stirring occasionally.
  7. In a small bowl, whisk together the cornstarch with the remaining 1/4 cup of water to create a slurry. Once the sauce is boiling, slowly whisk the cornstarch slurry into the sauce. Continue to stir constantly until the sauce thickens to your desired consistency.
  8. Once the chicken is fully cooked and the sauce is thickened, combine the cooked chicken with the sweet and sour sauce.
  9. Serve the mixture immediately over hot, cooked rice.
  10. Offer additional gluten-free soy sauce on the side, allowing each person to add it to their taste preference.
