Chicken Sausage Stuffed Acorn Squash is a healthy, comforting, and flavorful option for dinner that’s surprisingly easy to make.

Cook Time: 40 minutes

Total Time: 1 hour

Ingredients

  • 3 Acorn Squash
  • Cinnamon (for squash glaze and garnish)
  • Melted Butter
  • 1 Tbsp Olive Oil
  • 1 Package of Al Fresco Sweet Apple Chicken Sausage (fully cooked & sliced)
  • 1 Cup Cooked Brown Rice
  • 4 Cups of Kale (shredded)
  • 2 Medium Apples (diced)

Instructions

  1. Begin by preheating your oven to 350°F (175°C).
  2. Carefully cut the acorn squash in half lengthwise.
  3. In a small bowl, combine the melted butter with a dash of cinnamon. Brush this fragrant cinnamon butter generously over the cut surfaces of the acorn squash.
  4. Place the squash halves, cut-side up, in a shallow baking dish. Add about half an inch of water to the bottom of the dish around the squash to create a moist baking environment.
  5. Bake the acorn squash for approximately 40 minutes, or until it is fork-tender.
  6. Once baked, remove the squash from the oven. Carefully scoop out the seeds and any stringy bits from the center, creating a neat “bowl” in each half. Set aside.
  7. While the acorn squash is baking or after it’s done, prepare the stuffing. Heat the olive oil in a medium-sized skillet over medium-high heat.
  8. Add the sliced Al Fresco Sweet Apple Chicken Sausage to the skillet and sauté for a few minutes until lightly browned and heated through.
  9. Next, add the cooked brown rice, shredded kale, and diced apples to the skillet. Continue to cook for about 10 minutes, stirring occasionally, until the kale has wilted and the apples have softened slightly.
  10. Once the stuffing mixture is thoroughly warmed, spoon a generous amount into each half of the baked acorn squash.
