Delicious & Quick: Air Fryer or Ninja Foodi Low-Carb Breakfast Casserole
Are you navigating the world of low-carb eating? Many of us are, whether it’s a dedicated dietary plan or simply a conscious effort to reduce carbohydrate intake. For those seeking to manage weight or improve overall health, cutting back on carbs can be a game-changer. I know the struggle – carbs are delicious, but as we mature, our bodies often don’t process them as efficiently as they once did. It’s a classic dietary challenge, but with smart recipes, enjoying satisfying meals without the carb overload is entirely achievable.
This recipe for a Low-Carb Breakfast Casserole is designed to be both incredibly tasty and remarkably simple to prepare, especially using a modern kitchen appliance like an Air Fryer or Ninja Foodi. Forget complicated cooking processes; you can have a hearty, low-carb breakfast on your table in as little as 15 minutes of active cooking time, making it perfect for busy mornings or weekend brunches. If you occasionally crave a more traditional breakfast with potatoes, consider trying our Air Fryer Sausage Breakfast Casserole. However, for today, our focus is squarely on this fantastic low-carb alternative, packed with flavor and nutrition.
Why Choose a Low-Carb Breakfast Casserole?
Adopting a low-carb lifestyle means making deliberate choices about what you eat, and breakfast is often the easiest meal to start with. A low-carb breakfast casserole offers numerous benefits:
- Sustained Energy: By reducing sugars and starches, you can avoid the typical energy crash associated with high-carb breakfasts, keeping you fuller and more energized throughout your morning.
- Weight Management: Low-carb meals can help regulate blood sugar levels and promote a feeling of satiety, which can aid in controlling cravings and supporting weight loss goals.
- Convenience: This casserole is an excellent meal-prep option. You can assemble it in advance or cook a large batch to enjoy over several days.
- Nutrient-Rich: Loaded with protein from eggs and sausage, and vitamins from vegetables, it’s a power-packed start to your day.
- Diet-Friendly: Whether you’re following a Keto, Atkins, or simply a reduced-carb diet, this recipe fits seamlessly into your eating plan.
The Power of Your Appliance: Air Fryer vs. Ninja Foodi
Both the Air Fryer and Ninja Foodi are fantastic for making this breakfast casserole, each offering unique advantages:
Using Your Ninja Foodi
The Ninja Foodi is a versatile multi-cooker, often combining pressure cooking, slow cooking, steaming, and air frying capabilities. For this low-carb breakfast casserole, you’ll primarily use its air crisp function. A significant benefit of the Ninja Foodi is its ability to brown the sausage and sauté the vegetables directly in the pot before adding the remaining casserole ingredients. This “one-pot” approach minimizes cleanup and streamlines the cooking process, making it incredibly efficient.
Using Your Air Fryer
A standalone air fryer operates like a small convection oven, circulating hot air to cook food quickly and evenly, achieving a wonderfully crispy texture. If you’re using an air fryer, you’ll want to use pre-cooked sausage or cook your sausage and vegetables on a stovetop beforehand. Once your ingredients are prepped, the air fryer will perfectly crisp the casserole to golden perfection. Its compact size often means faster preheating and cooking times compared to a traditional oven, ideal for swift morning meals.
Essential Equipment for Your Casserole
To successfully make this casserole in either appliance, having the right baking pan is key. The size of your pan will depend on the model and capacity of your Air Fryer or Ninja Foodi.
- For Ninja Foodi Users: I highly recommend a specific set of accessories designed for the Ninja Foodi, which includes an ideal multi-purpose pan. For this recipe, an 8.75-inch pan works perfectly, allowing for even cooking and easy removal from the larger pot. This size is also great for other recipes, like the Ninja Foodi Pumpkin Bread I’m developing! You can find suitable Ninja Foodi accessory sets on Amazon.
- For Air Fryer Users: Air fryers typically have smaller baskets, so a 7-inch pan is often a great fit. However, it’s crucial to measure your air fryer’s basket to ensure a snug, safe fit before purchasing. A smaller pan prevents overcrowding and ensures proper air circulation, which is vital for even cooking in an air fryer. Always double-check the manufacturer’s recommendations for accessory sizes for your specific air fryer model. A suitable 7-inch pan can often be found on Amazon.
Using a dedicated baking pan for your appliance not only ensures perfect results but also makes cleanup a breeze, as all the ingredients are contained within the pan.

Ingredients for Your Low-Carb Breakfast Casserole
This simple yet satisfying casserole relies on a handful of fresh, flavorful ingredients:
- 1 LB Ground Sausage: Choose your favorite variety – regular, mild, spicy, or even turkey sausage for a leaner option. Ensure it’s not pre-seasoned with high-carb ingredients if you’re strict low-carb.
- 1/4 Cup Diced White Onion: Adds a foundational aromatic flavor.
- 1 Diced Green Bell Pepper: Provides a touch of freshness and color. You can substitute with other low-carb vegetables like red bell pepper or even a handful of spinach.
- 8 Whole Eggs, Beaten: The base of our casserole. See the section below for egg variations.
- 1/2 Cup Shredded Colby Jack Cheese: A melty, flavorful cheese that binds everything together. Cheddar, mozzarella, or a Mexican blend would also work beautifully.
- 1 Tsp Fennel Seed: A secret ingredient that adds a delightful, slightly sweet, anise-like flavor, complementing the sausage perfectly.
- 1/2 Tsp Garlic Salt: Enhances the savory notes. Adjust to taste, keeping in mind the salt content of your sausage.
Customizing Your Low-Carb Breakfast Casserole
One of the best things about a breakfast casserole is its adaptability. Feel free to get creative with additions and substitutions to suit your taste or what you have on hand:
- Vegetable Power-Up: Add other low-carb vegetables like mushrooms, spinach, zucchini, or cherry tomatoes. Sauté them with the onions and peppers to ensure they soften nicely.
- Protein Boost: While sausage is classic, consider cooked bacon bits, diced ham, or even shredded chicken for different flavor profiles.
- Cheese Varieties: Experiment with different cheeses like sharp cheddar, Monterey Jack, pepper jack for a kick, or a blend of Italian cheeses.
- Spice It Up: A pinch of red pepper flakes, a dash of hot sauce, or a sprinkle of smoked paprika can add an extra layer of flavor.
- Herbs: Fresh chives, parsley, or thyme can elevate the taste and visual appeal.
Preparation Tips for a Perfect Casserole
Achieving a perfectly cooked, low-carb breakfast casserole is easy with these helpful tips:
- Pre-cook Your Sausage and Veggies: The sausage needs to be fully cooked before it goes into the casserole. If using a Ninja Foodi, you can brown the ground sausage directly in the pot using the sauté function. This is also the perfect time to add your diced onions and peppers, allowing them to soften and release their flavors. For air fryer users, simply cook the sausage and vegetables in a skillet on the stovetop. Ensure any pre-cooked sausage is thawed and warmed through, not frozen, as this will help the vegetables cook evenly alongside it.
- Consider Your Eggs: This recipe calls for 8 whole eggs, meaning both yolk and egg white. This yields a rich, fluffy casserole. However, you have flexibility:
- Half & Half: For a slightly lighter option, try a mix of 4 egg whites and 4 whole eggs.
- All Egg Whites: While I haven’t personally tried an all-egg-white version for this specific recipe, it would likely work. You might need to add one or two extra egg whites to compensate for the missing volume of the yolks and ensure the casserole holds together well.
Always beat the eggs thoroughly before pouring them over the other ingredients to ensure even distribution and a consistent texture.
- Pan Placement in Ninja Foodi: When using the Ninja Foodi, place your casserole pan on the rack in the low position. This ensures the casserole is properly exposed to the air crisp function and makes it easier to remove the hot pan once cooked.
- Air Fryer Pan Removal: For air fryer users, your pan will sit directly in the basket. Always remember that the pan will be extremely hot after cooking. Use sturdy oven mitts or heat-resistant silicone grips to safely remove it from the air fryer basket.

Notes
This casserole can be prepared with slight modifications whether you’re using an Air Fryer or a Ninja Foodi.
Remember that all air fryers and multi-cookers heat differently. If your casserole isn’t done to your liking after 15 minutes, add 5-minute increments and check until the eggs are fully set and cooked through. For reference, when we prepare this in our Ninja Foodi Air Fryer, it typically takes 15 minutes at 390°F (199°C).

Storage and Reheating Tips
This low-carb breakfast casserole is fantastic for meal prepping! Here’s how to store and reheat leftovers:
- Storage: Allow the casserole to cool completely before transferring it to an airtight container. It can be stored in the refrigerator for up to 3-4 days. For longer storage, you can freeze individual portions for up to 1 month. Wrap tightly in plastic wrap and then foil, or use freezer-safe containers.
- Reheating:
- Microwave: For a quick reheat, place a single serving on a microwave-safe plate and heat for 1-2 minutes, or until warmed through.
- Air Fryer/Ninja Foodi: For best results and to regain some of that crispy texture, reheat individual slices in your air fryer or Ninja Foodi at 300-325°F (150-160°C) for 5-7 minutes, or until heated through.
- Oven: Reheat larger portions in a conventional oven at 350°F (175°C) for 10-15 minutes, or until warm.
