  • 1 Pizza Dough or Gluten-Free Pizza Dough Uncooked
  • 1 lb Ground Beef
  • 1 Package Taco Seasoning
  • 2 Cups Lettuce
  • 1 Can of Ranch Style Beans
  • 1 Can of RO*TEL
  • Shredded Cheddar Cheese
  • Catalina Dressing

Instructions

  • On a lightly floured surface, take your prepared pizza dough (whether store-bought or homemade, or a gluten-free alternative) and roll it out into a rectangular shape. Aim for a thickness that’s suitable for a flatbread – not too thick, but certainly not so thin that it tears easily. This thinness will ensure a crisp texture when grilled.
  • Carefully transfer your rolled-out dough onto a sheet of greased foil. Ensure the foil is large enough to contain the dough and provide a good barrier on the grill. Set this aside while you prepare your fillings.
  • In a large skillet, brown the ground beef over medium heat, breaking it apart as it cooks. Once fully cooked, drain any excess grease. Stir in the taco seasoning according to the package instructions, ensuring the beef is well coated with flavor. Set this seasoned taco meat aside.
  • Preheat your outdoor grill to a medium-high heat. Once it’s hot, carefully place the pizza dough, still on its greased foil, directly onto the grill grates. The foil side should be facing down, protecting the dough while allowing it to cook evenly.
  • Allow the dough to grill for approximately 5 minutes on this first side. It’s crucial to watch it closely during this step, as grill temperatures can vary, and you want a beautifully golden, lightly toasted bottom, not a burnt one.
  • Using tongs or a pizza peel, carefully remove the partially grilled dough from the grill. It will be hot, so handle with care. Immediately flip it over, so the uncooked side is now facing down towards the grill, and the lightly toasted side is facing up.
  • Working quickly while the dough is still hot on the grill, gently remove the foil. Then, spread the ranch style beans evenly across the cooked side of the pizza crust, which should now be facing upwards. The warmth of the crust will help warm the beans.
  • Let the flatbread continue grilling for another 5 minutes, or until the bottom crust is fully cooked and slightly crispy. Again, maintain a close watch to prevent burning and achieve that perfect texture.
  • Once the crust is perfectly cooked, carefully remove the flatbread from the grill. Now comes the fun part: generously top it with the seasoned ground beef, a sprinkle of fresh shredded lettuce, a hearty amount of shredded cheddar cheese, and finally, a good helping of your favorite RO*TEL.
  • For that final flourish, drizzle Catalina Dressing over the top just before serving. Slice into generous portions and serve immediately, allowing your guests to savor the warm, cheesy, and zesty flavors of this unique grilled flatbread.
