Ingredients

  • 6 Boneless, Skinless Chicken Thighs
  • Cornstarch or Potato Starch
  • 1/2 cup Gluten Free Soy Sauce or Regular Soy Sauce
  • 1/4 cup Water
  • 2 tablespoons Rice Wine Vinegar
  • 2 tablespoons Brown Sugar
  • 1/4 cup Granulated Sugar
  • 1 clove Garlic, crushed
  • 1 teaspoon Ground Ginger
  • 1/2 tablespoon Cornstarch (for sauce thickening)
  • Cooked Rice (for serving)
  • Cooked Green Beans (for serving)
  • Sliced Green Onions (for garnish)

Instructions

  1. Cut the chicken into cubed chunks, then toss in a bowl with Cornstarch or Potato Starch. Use enough to coat the chicken evenly.
  2. Place the coated chicken in the Air Fryer basket in a single layer. Cook according to your Air Fryer Manual for chicken. (Note: We cooked ours at 390°F / 199°C for 15 minutes on each side, flipping halfway through).
  3. While the chicken is cooking, prepare the sauce. In a small saucepan, combine the soy sauce (gluten-free if needed), water, rice wine vinegar, brown sugar, regular sugar, crushed garlic, and ground ginger. Whisk this mixture well until all ingredients are nicely combined.
  4. Bring the sauce to a low boil over medium heat, then gradually whisk in the 1/2 tablespoon of cornstarch. Continue whisking until the sauce has thickened to your desired consistency. (Note: If it isn’t as thick as you prefer, you can add another 1/2 Tablespoon of cornstarch mixed with a little water).
  5. Remove the saucepan from heat and let the sauce sit for about 5 minutes to thicken further.
  6. Set the sauce aside while the chicken finishes cooking.
  7. Once the chicken is cooked through and golden brown, add it to a small skillet or back into the saucepan with the prepared teriyaki sauce. Warm it up gently, ensuring the chicken is thoroughly coated in the sauce.
  8. Serve the teriyaki chicken immediately over a bed of freshly cooked rice, accompanied by steamed green beans or your favorite vegetables.
  9. Garnish with sliced green onions for a fresh touch and added flavor.
