Hamburger Stuffed Omelets

Ingredients

For the Hamburgers:

  • 1 Lb Ground Beef (or ground turkey/chicken)
  • 1 Tsp Fennel Seeds
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1 Tsp Ground Sage

For the Omelets:

  • 8-12 Eggs (2-3 per omelet, can use egg whites + 1 whole egg)
  • Peppers, Onions, Spinach (chopped, to taste)
  • Shredded Mozzarella Cheese (or your preferred cheese)
  • Optional: Salsa, Salt/Pepper (for topping)

Instructions

  1. Begin by combining the ground beef with the fennel seeds, garlic powder, onion powder, and ground sage. Mix well and form into 4 patties.
  2. Using a grill pan or a large skillet, place it on the stovetop and heat until you reach medium heat. Lightly grease the pan.
  3. Place each patty on the greased pan. Cook on each side for about 10-15 minutes, or until the internal temperature reaches at least 165°F (74°C) and they are well done.
  4. Once the patties are cooked, remove them and place on a paper towel-lined plate to let any excess grease drain out.
  5. In a medium non-stick skillet, begin making the omelets. Whisk together 2 eggs (or 2 egg whites plus 1 whole egg, if desired) until well combined. Pour the whisked egg into the lightly greased skillet over medium-low heat.
  6. Let the egg cook until the edges begin to set and the surface is still slightly wet and bubbly. Then, add your desired toppings, including one of the cooked hamburger patties (you can chop it or leave it whole), to one side of the omelet. Sprinkle with shredded cheese.
  7. Using a spatula, carefully release the empty side of the omelet and fold it in half to cover the meat and veggies.
  8. Let the omelet cook for another 1-2 minutes until slightly browned and the cheese is melted.
  9. Continue this process for the remaining hamburger patties and eggs, making individual omelets.
