Creamy Chicken & Rice
Servings: 6
Ingredients
- 1 Pound Skinless Boneless Chicken Thighs
- 1 Cup All Purpose Flour or Gluten Free All Purpose Flour
- 1 Tsp Ground Black Pepper
- 1 Tsp Paprika
- 2 Cups Minute Rice (White or Brown, Uncooked)
- 2 Cups of Chicken Broth
- 1 10.5 oz Can of Cream of Mushroom or Gluten Free Cream of Mushroom
- 2 Cups of Water
Instructions
- Preheat oven to 400°F (200°C).
- Spray a 9×13 baking dish with non-stick cooking spray.
- Combine the flour, pepper, and paprika in a shallow dish.
- Dip each piece of chicken in the flour mixture on both sides, shake off any excess, and place in the prepared baking dish.
- Sprinkle the uncooked Minute Rice evenly over the chicken pieces.
- Pour the chicken broth, cream of mushroom soup, and water evenly over the chicken and rice mixture.
- Bake for 30 minutes. Carefully remove the dish from the oven and gently stir the rice to prevent any sticking or overcooking of the top layer.
- Return the dish to the oven for an additional 30 minutes, or until the chicken is fully cooked through and the rice is tender.
- Serve hot with your choice of side dishes.
