Transform Leftovers into a Zesty Mexican Chicken Pizza
Yesterday, we shared the mouth-watering recipe for our Slow Cooker Chicken Carnitas. While the name traditionally refers to pork, our chicken version is equally flavorful and incredibly versatile. Today, we’re thrilled to show you how to effortlessly transform those delicious leftovers into an entirely new and exciting meal: a vibrant Mexican Chicken Pizza!
Many people shy away from leftovers, but I consider myself a big fan – especially when they can be reinvented into something completely different. There’s a certain culinary magic in taking a dish from one day and giving it a fresh, new identity for the next. This approach not only prevents food waste but also sparks creativity in the kitchen, making meal planning both efficient and enjoyable.
Our Slow Cooker Chicken Carnitas recipe yields a generous amount of tender, shredded chicken, perfect for multiple meals. After enjoying it in classic forms like nachos and burritos for lunch, my husband and I decided to elevate our next “pizza night” by featuring this flavorful chicken as the star topping. Blending it with fresh garden vegetables promised a delightful fusion of flavors, and it certainly delivered!
We gathered crisp green bell peppers and ripe tomatoes straight from our garden, along with savory black olives, to adorn our pizza. A generous layer of shredded mozzarella cheese melted to perfection, completing this quick and easy dinner masterpiece. The vibrant colors and fresh tastes instantly brought a festive, Mexican-inspired twist to our traditional pizza night.
Choosing Your Perfect Pizza Crust: Gluten-Free or Classic
The foundation of any great pizza is its crust, and thankfully, there are fantastic options for every dietary need and preference. For those following a gluten-free diet, I highly recommend using this reliable gluten-free pizza crust recipe. A personal tip for consistent success is to use Better Batter All Purpose Flour; it works like a charm every time, ensuring a delicious and satisfying gluten-free base.
If gluten isn’t a concern, my all-time favorite is this simple yet incredible bread machine pizza crust recipe. It yields a wonderfully soft and chewy crust with minimal effort, making homemade pizza an absolute breeze. Whether you opt for a bread machine or prefer to knead by hand, the freshness of a homemade crust truly elevates the entire pizza experience.
The Unbeatable Value of Homemade Pizza
Pizza nights are a beloved tradition in our family, and I genuinely relish the process of making them entirely from scratch. It’s become a rare occurrence for us to order delivery anymore, and for good reason. When I can craft a delicious, customized pizza using pantry staples for a fraction of the cost, it’s hard to justify the expense of takeout.
Have you noticed how the cost of delivery pizza seems to continually climb? It’s astounding to think that creating a gourmet pizza at home can cost less than $5, while ordering out often means spending upwards of $20 or more for a handful of toppings on a standard crust. This stark difference in price highlights one of the major benefits of homemade meals: incredible savings without sacrificing quality or flavor. Beyond the financial aspect, making pizza at home offers complete control over ingredients, ensuring fresh, wholesome components. It also transforms meal prep into a fun, interactive activity for the whole family, creating memories around the kitchen island as everyone contributes to building their perfect pie.
But enough about the economics of pizza – let’s get back to this incredibly flavorful Mexican Chicken Pizza!

For the Slow Cooker Chicken (Carnitas-Style):
- 2 Medium-Sized Boneless, Skinless Chicken Breasts
- 3 Garlic Cloves Crushed
- 1 Tsp Ground Cumin
- 1 Tsp Dried Oregano
- 1/4 Tsp Salt
- 1/4 Tsp Ground Black Pepper
- 3/4 Cup Orange Juice
- 2 Tbsp Fresh Lime Juice
- 2 Chipotle Chilies Canned in Adobo Sauce Drained and Chopped
For the Pizza:
- Pizza Crust (Homemade or store-bought, traditional or gluten-free)
- Pizza Sauce (Traditional tomato or a Mexican-inspired salsa base)
- Green Bell Pepper Diced
- Green Onions Diced
- Small Tomato Diced
- Black Olives Sliced
- 2 Cups Finely Shredded Mozzarella Cheese (Or a blend of Mexican cheeses)
Instructions
-
Begin by preparing the chicken if you haven’t already. Place all slow cooker chicken ingredients into a 5-quart slow cooker and cook on low for 8 hours until tender. Once cooked, shred the chicken and set aside. This flavorful chicken is the heart of our Mexican pizza.
-
Prepare your pizza crust according to your chosen recipe or package directions. Once the crust is ready, spread an even layer of pizza sauce (or salsa for a bolder Mexican flavor) over the surface. Then, evenly distribute the shredded Mexican-style chicken, followed by the diced bell pepper, green onions, tomato, and sliced black olives. Finish by sprinkling generously with mozzarella cheese.
-
Bake the pizza in a preheated oven at 425°F (220°C) for approximately 15 minutes, or until the cheese is beautifully melted, bubbly, and the crust is golden brown.
-
(Note: Baking time and temperature may vary depending on the specific pizza crust recipe or brand you are using. Always refer to the crust instructions for best results.)
