Why Grill Your Apple Crisp? The Secret to Unforgettable Flavor

You might be wondering, “Why bother grilling a dessert when I have an oven?” The answer lies in the incredible flavor transformation. Grilling imparts a subtle smokiness and a delicious caramelization that an oven simply cannot replicate. The direct heat of the grill, combined with the smoky environment, elevates the natural sweetness of the apples and the warmth of the spices. This method creates a crisp with a richer, more complex profile, making it a showstopper at any backyard barbecue or autumn feast. Furthermore, grilling frees up oven space, which can be invaluable when preparing a large meal. You can easily cook your main course on the grill and then transition to this dessert, enjoying a seamless outdoor cooking experience from start to finish. It’s not just a dessert; it’s an experience.

Essential Tips for Grilling the Perfect Apple Crisp

Choosing the Right Cookware: Cast Iron is Key

The foundation of a great grilled apple crisp starts with the right cookware. This recipe absolutely requires a vessel that can withstand high, direct heat. Our top recommendation is a Lodge Cast Iron Skillet. Cast iron is incredibly durable, distributes heat evenly, and retains heat beautifully, which is crucial for achieving that perfectly cooked, bubbly filling and crisp topping on the grill. A 10-inch or 12-inch cast-iron skillet will work wonderfully for this recipe, providing ample space for your apples and topping. If you’re new to cast iron or need guidance on selecting the ideal size for your needs, this informative article on picking out a skillet offers excellent advice. Avoid using regular baking dishes or pans that aren’t explicitly rated for grill use, as they may crack or warp under the intense heat.

Beyond cast iron, other grill-safe options include heavy-duty stainless steel pans or even disposable aluminum foil pans for easy cleanup, though cast iron will always deliver the best results due to its superior heat properties and ability to develop a beautiful crust.

Selecting and Preparing Your Apples: A Matter of Preference and Perfection

The star of any apple crisp is, of course, the apples! While I frequently opt for Honeycrisp apples due to their balanced sweetness and crisp texture that holds up well during cooking, you truly have the freedom to choose any apple variety you prefer. Just keep in mind that the tartness and texture of your crisp will vary depending on the type of apple used. For a sweeter crisp, consider Fuji or Gala. If you enjoy a tart contrast to the sweet topping, Granny Smith apples are an excellent choice. A blend of two or three different apple varieties can also create a more complex and nuanced flavor profile.

Now, about peeling: whether you leave the skin on or take it off is entirely up to you. Some prefer the added fiber and rustic look of unpeeled apples, while others prefer the smooth texture of peeled ones. Lately, I’ve found myself peeling apples more often, especially since I acquired this fantastic Apple Peeler. This gadget has become one of my favorite kitchen purchases because it peels, slices, and cores the apple all in one magical motion! It’s incredibly efficient, saving a lot of time and effort. We even use it regularly to make homemade applesauce.

Mastering Your Grill for Dessert Perfection

Once your apple crisp is prepared and ready for its smoky adventure, it’s time to fire up your grill. The beauty of this recipe is its adaptability to various grill types:

  • Pellet Grill: These grills are excellent for maintaining consistent temperatures and infusing a wonderful smoky flavor. Any type of wood pellets can be used for this recipe; we often experiment with different varieties to find subtle flavor nuances. Fruitwood pellets like apple or cherry pair beautifully with the apples, while hickory or pecan can add a bolder, richer smoke. Follow your grill’s instructions for preheating to 350°F (175°C).
  • Charcoal Grill: For charcoal grilling, you’ll want to set up your grill for indirect heat. This means arranging the hot coals to one side and placing your cast-iron skillet on the other side. You can add a handful of wood chips (soaked in water for 30 minutes, then drained) directly onto the hot coals for added smoke flavor. Aim for a consistent internal temperature of 350°F (175°C) inside the grill, adjusting vents as needed.
  • Gas Grill: To use a gas grill, you’ll also need to create an indirect heat zone. Light one or two burners on one side of the grill and leave the other burners off. Place your skillet over the unlit burners. To achieve a smoky flavor, you can use a smoker box filled with wood chips placed over the lit burners. Preheat the grill to 350°F (175°C) before placing the crisp inside.

The crisp will typically take about an hour to cook, though this can vary slightly based on your grill and the thickness of your apple slices. You’ll know it’s ready when the topping is golden brown and the apples underneath are tender and bubbly. If you notice the topping appears a bit floury or isn’t crisping up as desired towards the end of the cooking time, a light spray of coconut oil or olive oil can work wonders, helping it brown beautifully and achieve that irresistible crunch.

Ingredients

Apple Filling

  • 4 Pounds Honeycrisp Apples (Thinly Sliced and Peeled)
  • 1 Cup Granulated Sugar
  • 1 Tbsp Gluten-Free or Regular All-Purpose Flour
  • 1 Tsp Ground Cinnamon
  • 1 Tsp Ground Nutmeg
  • 1/2 Cup Water

Topping

  • 1 Cup Gluten-Free or Regular Old Fashioned Oats
  • 1 Cup Gluten-Free or Regular All-Purpose Flour
  • 1 Cup Brown Sugar Packed
  • 1/4 Tsp Baking Powder
  • 1/4 Tsp Baking Soda
  • 1/2 Cup Butter Softened
  • Vanilla Ice Cream Optional

Instructions

  • Preheat your pellet grill (or charcoal/gas grill for indirect heat) to 350°F (175°C). For a pellet grill, add your preferred wood pellets according to the manufacturer’s instructions.
  • Carefully arrange the thinly sliced and peeled (or unpeeled, if preferred) apples evenly in a 10-inch or 12-inch cast-iron skillet.
  • In a small bowl, whisk together the granulated sugar, gluten-free or regular all-purpose flour, ground cinnamon, and ground nutmeg until well combined.
  • Evenly sprinkle this sugar and spice mixture over the apples in the skillet.
  • Pour 1/2 cup of water over the apples and the sugar mixture. This helps create a luscious, bubbly filling as it cooks.
  • In a separate small bowl, combine the gluten-free or regular old-fashioned oats, the second measure of gluten-free or regular all-purpose flour, packed brown sugar, baking powder, and baking soda.
  • Cut in the softened butter using a pastry blender, your fingertips, or a fork, until the mixture resembles coarse crumbs.
  • Evenly distribute this crumbly topping over the apples and sugar mixture in the skillet.
  • Carefully place the skillet onto the preheated grill. Cook at 350°F (175°C) for 45-60 minutes, or until the topping is golden brown and crispy, and the apples are tender and bubbling. If the topping browns too quickly, you can loosely tent it with aluminum foil.
  • Once cooked, carefully remove the hot skillet from the grill using oven mitts. Let it cool for a few minutes before serving warm with a scoop of vanilla ice cream or frozen yogurt (optional, but highly recommended!).

Notes

Whether you peel your apples or leave the skin on is entirely up to your personal preference. For a smoother texture, peel them. For added fiber and a more rustic feel, leave the skins on.

Serving Suggestions and Variations

This Grilled Apple Crisp is spectacular on its own, but we always find it reaches peak perfection when served warm with a generous scoop of vanilla frozen yogurt or ice cream. The contrast of the warm, spiced apples with the cold, creamy topping is simply divine, ensuring there’s never a drop left! It’s become a regular dessert at our cookouts and anytime we’re craving something sweet and comforting. The convenience of being able to grill this while our main meal is cooking means everything is ready simultaneously, allowing for more time enjoying company and less time fussing in the kitchen.

Don’t limit yourself to just vanilla! Consider serving with caramel swirl ice cream, a dollop of fresh whipped cream, or a sprinkle of toasted pecans for added crunch. A drizzle of homemade caramel sauce or a sprinkle of flaky sea salt can also elevate the experience.
