Ingredients

  • 1/3 Cup All Purpose Flour or Gluten Free All Purpose Flour
  • 2 2/3 Cups Skim Milk
  • 1 1/4 Cup Shredded Sharp Cheddar Cheese Reserve 1/4 Cup
  • 1/2 Cup Grated Parmesan Cheese
  • 3 Oz Light Velveeta Cheese
  • 3 Cups Uncooked Elbow Macaroni Pasta or Gluten Free Pasta
  • 1/2 Tsp Salt
  • 1/4 Tsp Ground Black Pepper
  • 1 Garlic Clove Crushed
  • Cooking Spray

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Begin by cooking the pasta according to package directions until al dente. Drain well.
  3. While the pasta is cooking, prepare the cheese sauce. In a medium saucepan, add the milk and gradually whisk in the flour until smooth. Bring this mixture to a medium heat, whisking continuously, until it thickens (approximately 8 minutes).
  4. Immediately remove from heat and whisk in the shredded sharp cheddar cheese (reserving 1/4 cup for topping), grated Parmesan cheese, and light Velveeta cheese. Continue to stir until all the cheese has melted into a smooth, creamy sauce.
  5. Return the drained pasta to the empty stockpot. Pour the prepared cheese sauce over the pasta and add the crushed garlic, salt, and ground black pepper.
  6. Stir gently until the pasta is thoroughly coated with the rich cheese sauce.
  7. Lightly spray a 9×13-inch baking dish with cooking spray. Pour the macaroni and cheese mixture evenly into the prepared dish.
  8. Sprinkle the reserved 1/4 cup of shredded sharp cheddar cheese over the top of the macaroni and cheese.
  9. Bake for 10-15 minutes, or until the cheese topping is melted, bubbly, and slightly golden brown. Serve hot and enjoy!
