  • 1 Cup Fresh Blackberries
  • 1/2 Cup Water
  • 2 Tbsp Rice Vinegar
  • 1/2 Lemon (juiced)
  • 1 Tsp Sugar
  • 6 Tbsp Olive Oil
  • 1/2 Tsp Garlic Salt

Instructions

  1. Place the blackberries and 1/2 cup of water in a small saucepan. Gently warm over low heat until the blackberries soften and begin to break down, about 5-7 minutes.
  2. Set a fine mesh strainer over a mixing bowl. Carefully pour the softened blackberries into the strainer. Using a spatula or the back of a spoon, press the blackberries firmly against the mesh to extract all the juice. Continue until only the seeds and pulp remain in the strainer, and a smooth, vibrant juice has collected in the bowl. Discard the seeds.
  3. To the blackberry juice in the mixing bowl, add the rice vinegar, the fresh juice from half a lemon, sugar, olive oil, and garlic salt.
