Ingredients

  • 1 Lb Ground Beef
  • 1 Package Taco Seasoning or Gluten-Free Taco Seasoning
  • 1/2 Tbsp Olive Oil
  • 1/4 Cup White Onion (Diced)
  • 4 Cups Cooked Rice
  • 1 Cup Black Beans (rinsed and drained)
  • 1 Cup Corn (fresh, frozen, or canned and drained)
  • 1 Red Bell Pepper (Diced)
  • 1 Green Bell Pepper (Diced)
  • 1 Tomato (Diced)
  • 1/2 Cup Cilantro (Chopped, plus extra for garnish)
  • 1/2 Lime (for fresh juice)
  • Optional – Shredded Cheese, Tortillas, Tortilla Chips, Lettuce, Sour Cream, Salsa, Guacamole

Instructions

  1. Begin by browning the ground beef in a large skillet over medium-high heat. Drain any excess fat. Once browned, combine with the taco seasoning as instructed on the package, adding a small amount of water if necessary to create a sauce.
  2. Once the beef is fully cooked and seasoned, set it aside.
  3. In the same skillet (or a clean cast iron skillet), add the olive oil and diced white onion. Sauté the onion over medium-high heat for about 5 minutes, until softened and translucent.
  4. Add the cooked rice, black beans, corn, red and green bell peppers, diced tomato, and chopped cilantro to the skillet with the sautéed onion.
  5. Return the seasoned ground beef to the skillet with the vegetable and rice mixture.
