Mongolian Beef Egg Roll Bowls

Ingredients

  • Egg Roll Wrappers
  • Rice Noodles
  • Sauce:
  • 2 Tsp Vegetable Oil
  • 1/2 Tsp Ginger
  • 1 Tbsp Minced Garlic
  • 1/2 Cup Kikkoman Soy Sauce or Gluten Free Soy Sauce
  • 1/2 Cup Water
  • 3/4 Cup Brown Sugar Packed
  • Meat:
  • 1 Lb Flank Steak
  • 1/4 Cup Corn Starch
  • 2 Tbsp Oil
  • 3 Green Onions Sliced (About a 3/4 Cup)

Instructions

  • Preheat your oven to 350°F (175°C).
  • Prepare two muffin tin pans by lightly spraying them with non-stick cooking spray. Carefully take one egg roll wrapper and gently press it into each alternate muffin cup to form a bowl shape. This method will yield 12 egg roll bowls.
  • Bake the egg roll wrappers in the preheated oven according to the package instructions until they are golden brown and crispy. Keep a close eye on them to prevent burning.
  • Once baked, carefully remove the crispy egg roll bowls from the muffin tins and set them aside to cool while you prepare the rest of the meal.
  • While the egg roll bowls are cooling, begin preparing the savory Mongolian sauce. In a medium bowl, combine the vegetable oil, ginger, minced garlic, Kikkoman Soy Sauce (or gluten-free soy sauce), water, and packed brown sugar. Whisk all the ingredients together thoroughly until the sugar is dissolved and the sauce is well combined.
  • Next, prepare the flank steak. Slice the flank steak against the grain into thin strips. Place the steak strips into a large Ziploc bag, then add the cornstarch. Seal the bag tightly and shake vigorously until all the steak pieces are evenly coated with the cornstarch. This step helps tenderize the beef and creates a velvety texture for the sauce.
  • Heat the remaining 2 tablespoons of oil in a large cast iron skillet or wok over medium-high heat until shimmering. Once hot, add the cornstarch-coated flank steak to the skillet.
  • Cook the flank steak for 5-10 minutes, stirring occasionally, until it is lightly browned and cooked through. The cornstarch will help create a beautiful sear on the beef.
  • Pour the prepared Mongolian sauce into the skillet with the beef. Add about 1/2 cup of the sliced green onions, reserving the rest for garnish.
  • Bring the mixture to a gentle simmer and let it cook for an additional 10 minutes, or until the sauce has thickened and is beautifully absorbed into the steak, coating each piece with rich flavor.
  • While the beef simmers, prepare the rice noodles according to the package instructions. Drain well.
  • To assemble the bowls, place a small portion of the cooked rice noodles into the bottom of each crispy egg roll bowl. Then, spoon a generous amount of the tender Mongolian Beef over the noodles.
  • Finally, garnish each bowl with the remaining fresh green onions for a pop of color and extra flavor. Serve immediately and enjoy your homemade Mongolian Beef Egg Roll Bowls!
