Ingredients

  • 1 lb Ground Beef
  • 1/2 Cup White Onion Chopped
  • 1 Cup Beef Broth
  • 1 8 oz Can of Tomato Sauce No Salt Added
  • 1 Package Taco Seasoning
  • 1 4 oz Can of Green Chilies Chopped
  • 1 1/2 Tbsp All Purpose Flour or Gluten Free All Purpose Flour
  • 1 Package White Corn Tortillas
  • 1/2 Cup Shredded Mexican Cheese
  • Toppings – Sour Cream Cilantro, Lettuce, Tomato, Etc.

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, coat with non-stick cooking spray, then brown the ground beef and add in the chopped onion over medium-high heat.
  3. Once the beef is fully cooked, drain any excess grease and return the meat to the skillet.
  4. Add in the beef broth, tomato sauce, taco seasoning, and chopped green chilies. Mix everything well and continue cooking on medium-high heat.
  5. Carefully stir in the all-purpose flour (or gluten-free all-purpose flour) and let the mixture simmer for 5-10 minutes, or until it has thickened to your desired consistency.
  6. While the meat mixture is simmering, spray a large cast iron skillet (or a 9×13 inch baking dish) with non-stick cooking spray.
  7. Arrange about 5-6 white corn tortillas on the bottom of the skillet, overlapping slightly to cover the base. (If your tortillas are stiff, warm them in the microwave for about 30 seconds before layering to make them more pliable.)
  8. Once the meat mixture has thickened, pour most of it (leaving about 1/2 a cup) evenly over the layer of tortillas in the skillet.
  9. Place another layer of corn tortillas on top of the meat mixture, then pour the remaining 1/2 cup of meat mixture over these tortillas.
  10. Generously sprinkle the shredded Mexican cheese over the top layer.
  11. Bake for 10 minutes, or until the cheese is melted, bubbly, and slightly golden.
  12. Serve immediately, topped with your favorite additions like sour cream, cilantro, lettuce, or tomato. Enjoy!
