Ingredients

  

  • 1/2 Cup Light Butter
  • 1/2 Cup White Sugar
  • 2 Eggs
  • 1 Cup Yellow Cornmeal
  • 1 1/2 Cups All Purpose Flour or Gluten Free All Purpose Flour
  • 2 Tsp Baking Powder
  • 1/2 Tsp Salt
  • 1 1/2 Cups Skim Milk
  • 1-2 Jalapeños depending on the heat you want

Instructions

  • Preheat your oven to 375°F (190°C).
  • Wearing gloves, carefully slice the jalapeños into small pieces. You can choose to remove the seeds and membranes for less heat, or leave them in for a spicier cornbread.
  • In a stand mixer with a paddle attachment or a large mixing bowl with a hand mixer, cream together the light butter and white sugar until light and fluffy. Beat in the eggs one at a time until well combined. Gradually add the yellow cornmeal, all-purpose flour (or gluten-free all-purpose flour), baking powder, and salt. Mix until just combined, taking care not to overmix. Finally, slowly pour in the skim milk and mix until a smooth batter forms. Gently fold in the sliced jalapeños as the last ingredient.
