Choosing the Best Gluten-Free Flour for Desserts
The secret to exceptional gluten-free desserts lies in selecting the right flour blend. For all the recipes shared here, we emphasize using a high-quality, gluten-free all-purpose flour blend. The key is to find a “1:1 swap” blend, meaning it can be directly substituted for traditional wheat flour in equal amounts without complex conversions. This simplifies gluten-free baking immensely, making it accessible even for beginners.

A crucial component of these successful 1:1 gluten-free blends is the inclusion of xanthan gum. Xanthan gum acts as a binder, mimicking the elasticity and structure that gluten provides in wheat flour. Without it, gluten-free baked goods can often be crumbly or dense. When your chosen blend already contains xanthan gum, it eliminates the need to add it separately, streamlining your baking process and ensuring your desserts achieve that perfect taste and texture you’d expect from a gluten-containing treat.
We highly recommend reputable brands such as King Arthur Gluten-Free Measure for Measure Flour, Cup4Cup Gluten-Free Flour, Better Batter, Bob’s Red Mill Gluten-Free 1-to-1 Baking Flour, or Jules Gluten-Free All-Purpose Flour Blend. These brands consistently deliver excellent results in a wide range of dessert recipes. Always double-check that you are using a high-quality gluten-free all-purpose flour that explicitly states it’s a 1:1 swap and contains xanthan gum for the best baking experience. This single ingredient is undeniably the most vital for crafting truly delicious and indistinguishable gluten-free desserts that are simple and easy to find at your local grocery store.
Essential Tips for Perfect Gluten-Free Baking

Before you embark on your gluten-free baking journey, understanding a few fundamental tips can significantly enhance your success and enjoyment. Gluten-free flours behave differently from traditional wheat flours, but with these simple guidelines, you’ll achieve perfect results every time.
- Choose a Premium Gluten-Free Flour Blend: As mentioned, this is paramount. Opt for a 1:1 baking blend that already contains binders like xanthan gum or guar gum. These gums are crucial for providing structure and elasticity, preventing your baked goods from becoming crumbly or dense. Our recommended brands (King Arthur, Cup4Cup, Better Batter, Bob’s Red Mill, Jules Gluten-Free) are excellent starting points, ensuring a consistent and reliable base for your gluten-free creations.
- Measure Ingredients with Precision: Accuracy is key in gluten-free baking. Unlike wheat flour, which can be more forgiving, gluten-free flours absorb liquids differently. Always use a kitchen scale for dry ingredients if possible, or ensure you level your measuring cups correctly by spooning flour into the cup and then leveling off with a straight edge. This prevents adding too much flour, which can lead to dry, heavy results.
- Allow the Batter to Rest: This often overlooked step is particularly beneficial for gluten-free recipes. If a recipe instructs, give your batter 20-30 minutes to rest before baking. This resting period allows the gluten-free flours to properly hydrate, resulting in a more tender, less gritty texture in the final product. It helps to fully incorporate the liquid ingredients, creating a more cohesive dough or batter.
- Avoid Overmixing: Once all ingredients are combined, mix only until they are just incorporated. Overmixing gluten-free batters can introduce too much air, which can then collapse during baking, leading to a tough or dense texture. Use a handheld mixer on low speed or mix by hand with a spatula to gently bring everything together without excessive aeration.
By following these quick and easy tips, you’ll master the art of gluten-free baking in no time. The result will be desserts with an ideal balance of texture and flavor, so delicious that your guests will be amazed they are gluten-free and taste exactly the same as their traditional counterparts!

Gluten-Free Monster Cookies
Save RecipeSaved!
Ingredients
- 3 Large Eggs
- 1 1/4 Cup Brown Sugar (Firmly Packed)
- 1 Cup Granulated Sugar
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Vanilla Extract
- 1 1/2 Cups Creamy Peanut Butter
- 1/2 Cup Unsalted Butter (1 stick, softened)
- 2 Teaspoons Baking Soda
- 4 1/2 Cups Gluten-Free Old Fashioned Oats
- 1 Cup Plain M&Ms
- 1 Cup Chocolate Chips
- 1/4 Cup Gluten-Free Crushed Pretzels or Additional Add-Ins
Instructions
-
Preheat your oven to 350°F (175°C). Prepare a baking sheet by lining it with parchment paper for easy cleanup.
-
In the bowl of a stand mixer fitted with the paddle attachment (or a large bowl with a hand mixer), combine the eggs, brown sugar, granulated sugar, salt, and vanilla extract. Beat on medium speed until well combined and creamy.
-
Next, add the creamy peanut butter, softened unsalted butter, and baking soda to the mixture. Continue to mix until all ingredients are thoroughly incorporated and smooth.
-
Gently fold in the gluten-free old-fashioned oats, plain M&Ms, and chocolate chips. If you’re using additional add-ins like crushed gluten-free pretzels, incorporate them at this stage as well. Mix these additions in thoroughly but avoid overmixing to maintain a tender cookie texture.
-
Using a tablespoon or a small cookie scoop, drop the cookie dough onto the prepared baking sheet, ensuring each cookie is about 2 inches apart to allow for slight spreading.
-
These cookies won’t spread or rise much during baking, so gently flatten each dough ball with the back of a spoon or your hand before placing the baking sheet in the oven.
-
Bake for 10-12 minutes at 350°F (175°C), or until the edges are lightly golden brown. The centers may still appear soft.
-
Once baked, remove the cookies from the oven and let them rest on the hot baking sheet for 5 minutes. This crucial step allows them to set and firm up. Afterward, carefully transfer them to a wire cooling rack to cool completely.
-
Serve your perfectly baked Gluten-Free Monster Cookies and enjoy!
Notes
This recipe typically yields approximately 3 to 4 dozen cookies, depending on the size you choose to make them. Adjust the portion size based on your preference for smaller or larger cookies.
