The Perfect Easter Dessert: Simple, Impressive, and Delicious

As Easter approaches, our homes often fill with the laughter and joy of family gatherings. For many, holiday meals are incomplete without a show-stopping dessert. Being the designated dessert maker, I always enjoy introducing new treats to our annual spread. This Blackberry Cobbler Ice Cream Cake has swiftly risen through the ranks to become a strong contender for a permanent spot on our holiday menu. Its ease of assembly, coupled with its incredible taste, makes it an ideal choice for busy hosts who want to create something special without spending hours in the kitchen.

The beauty of this dessert lies in its thoughtful layering. To create a generous portion for a crowd, I used two of MRS. SMITH’S® Blackberry Cobblers as the foundational layer in a standard 9×13 inch baking dish. This creates a robust base that perfectly complements the cool, creamy elements to follow. Next, a velvety smooth layer of vanilla ice cream is spread evenly over the cobbler, followed by a light and airy layer of whipped topping. The key to achieving that perfect ice cream layer is to soften it just enough to spread easily, then refreeze it until it’s firm and ready to support the next components of this delightful cake. This step ensures clean layers and a beautiful presentation.

Garnishing for a Grand Finale

Once the creamy layers are perfectly set, the final touch involves adorning the top with even more blackberries. You have the flexibility here to choose between a canned blackberry pie filling for extra richness and sweetness, or fresh blackberries for a vibrant, juicy pop. Both options add a beautiful visual appeal and enhance the overall blackberry flavor, ensuring that every bite is bursting with fruity goodness. The contrast between the cool, smooth ice cream and the slightly tart blackberries creates a truly unforgettable dessert experience.

A Taste of Summer, Anytime

While this cake is ideal for Easter, it’s particularly divine during the summer months when blackberries are in peak season. There’s something inherently delightful about a chilled, fruity dessert on a warm day, and this ice cream cake fits the bill perfectly. MRS. SMITH’S® truly stands out as one of the few frozen fruit pie brands that uses real butter in their recipes, which contributes immensely to the authentic, rich flavor of their cobblers. This commitment to quality makes all the difference, allowing this dessert to taste like it was made from scratch with love, even with the convenience of store-bought components.

This Blackberry Cobbler Ice Cream Cake beautifully marries the best of both worlds: the time-saving efficiency of a store-bought base with the customizable charm of a homemade creation. It’s a testament to how easily you can create a spectacular dessert that not only saves you time but also delivers on exquisite taste. My husband and kids could barely wait to dig into this decadent treat, and their enthusiastic reactions were all the confirmation I needed that this recipe is a definite keeper!

Beyond the Cobbler: Indulge in EDWARDS® Pies

While I was at Walmart stocking up for our ice cream cake, I also couldn’t resist picking up an EDWARDS® Cookies n Crème Pie. This pie was an instant hit, especially with my husband, whose eyes lit up at the sight of it! What I truly appreciate about EDWARDS® pies is their incredible convenience; all you have to do is thaw them and they’re ready to serve. They offer a gourmet presentation and taste, making them perfect for unexpected guests or when you simply want to treat yourself to a delicious dessert without any fuss. They are not only visually stunning but also surprisingly affordable, proving that you don’t have to compromise on quality or break the bank to enjoy a fantastic sweet ending.

Blackberry Cobbler Ice Cream Cake

Created by: Kristy Still

Servings: 12+

Ingredients

  • 2 Mrs. Smith’s Blackberry Cobblers
  • 1/2 Gallon of Vanilla Ice Cream
  • 1 Carton of Whipped Topping
  • Fresh Blackberries or Canned Blackberry Pie Filling (for garnish)

Instructions

  1. The day before serving, allow the vanilla ice cream to soften slightly. Once pliable, evenly spread it into a 9×13 inch baking dish. For easy removal later, line the dish with foil or parchment paper before adding the ice cream. Place the dish back into the freezer and refreeze until the ice cream is completely firm.
  2. Bake the Mrs. Smith’s Blackberry Cobblers according to the package instructions. After baking, let them cool completely at room temperature for 2-3 hours, or place them in the fridge to expedite the cooling process. Ensuring the cobblers are cold is crucial for layering.
  3. Once the cobblers are cooled, carefully invert them onto the bottom of your prepared 9×13 inch baking dish, creating the base layer for your ice cream cake. Don’t worry if the cobbler breaks apart slightly; it will still taste incredible and be covered by the next layers.
  4. Next, retrieve your frozen ice cream layer from the freezer. Gently flip it over onto the cobbler base, then peel off the foil or parchment paper from the back. This technique ensures a smooth, even layer of ice cream.
  5. Finally, spread the entire carton of whipped topping evenly over the ice cream layer, creating a light and airy finish.
  6. Garnish the top of the cake generously with either fresh blackberries or a canned blackberry pie filling to add a beautiful visual appeal and an extra burst of fruity flavor.
  7. If the ice cream has softened during assembly, place the entire dish back into the freezer for another 2-3 hours, or until it is firm enough to slice and serve. The cake will gradually thaw as it sits out for serving, reaching the perfect consistency.
