Ingredients

  • 1 Bunch Kale
  • Olive Oil Spray
  • 1 Cup Dried Cranberries
  • Toppings: Pecans, Almonds, Granola (or your favorite nuts/seeds)
  • For the Dressing:
  • 3 Tbsp Sugar
  • 3 Tbsp Nonfat Plain Greek Yogurt
  • 2 Tbsp Fat-Free Milk
  • 1 Tbsp Poppy Seeds
  • 1 Tbsp White Wine Vinegar

Instructions

  1. Tear kale into bite-size pieces and place in a large bowl. Lightly spray with olive oil spray to coat.
  2. Add in the dried cranberries and your chosen toppings (pecans, almonds, granola).
