  • 1 Head Red Leaf Lettuce
  • 2-3 Cups Village Harvest Golden Quinoa Cooked (1 Cup Uncooked makes about 2-3 Cups Cooked)
  • 1 Cup Black Beans
  • 1 Avocado Sliced
  • 1 Cup Corn
  • 1/2 Cup Red Onion Sliced
  • 1 Tomato Sliced
  • 1/4 Cup Shredded Cheese
  • Catalina Dressing

Instructions

  1. Prepare your Quinoa if you have not already. Typically, 1 cup uncooked will yield about 2-3 cups when cooked. Follow package instructions for best results.
  2. Begin assembling your salad by layering the red leaf lettuce as the base. Then, artfully arrange the cooked quinoa, black beans, sliced avocado, corn, red onion, and sliced tomato over the lettuce.
